INGREDIENTS:
– 1 pack of salt and pepper ribs
– courgettes
– 1 cucumber
– 2 cloves of garlic
– 400 g of whole Greek yoghurt
– 10 g of apple cider vinegar
INSTRUCTIONS: Chop the courgettes into round slices, heat up a drizzle of oil and two cloves of garlic, then add the courgettes and brown over a high heat for 4-5 mins. Once they have got some colour, turn off the hob, add 2 tablespoons of vinegar, the mint and the basil, then cover with cling film and leave the flavours to develop for 5 mins.
For the sauce, grate the cucumber with a large-holed grater, put some weight on it and leave the vegetable water to drain away for 20 mins.
Meanwhile, blend the Greek yoghurt with 2 cloves of garlic without the stem, as well as the cucumber, vinegar, oil and salt.
Brown the ribs in the oven and enjoy
