Ingredients

- Loin of pork loin with herbs
- 300g light-colored zucchini
- 150g spring onions
- 200g carrots
- 200g purple carrots
- 1 yellow bell pepper
- 1 red bell pepper
- 100 g of soybean sprouts
- 2 tablespoons of soy sauce
- 2 tablespoons of pumpkin seeds
- 2 tablespoons of sesame seeds



Proceedings
Start by preparing all the vegetables, cutting them into julienne or thin strips. This step is important to ensure that the vegetables cook evenly and have a nice texture in the finished dish. In a large skillet, heat a tablespoon of evo oil and the sesame seeds over medium-high heat. Add the spring onions and cook for one minute, then add the carrots and cook for another 2-3 minutes until they begin to soften slightly. Next, add the peppers and zucchini, and cook for another 2-3 minutes, stirring constantly. Add the soybean sprouts and continue cooking for another minute, stirring to evenly distribute the ingredients, and deglaze with white wine. Now it is time to reactivate the already cut herbed loin tenderloin directly into the pan with the vegetables until it is all cooked. Add the soy sauce, stir well to make sure all the ingredients are well seasoned and blended. Transfer the stir-fry to a serving plate and garnish with the pumpkin seeds, and the dish is ready.
