FILLET WRAPPED IN BACON WITH POMEGRANATE AND SAUTÉED SAVOY CABBAGE


INGREDIENTS (4 people):
⁃ 1 Eat Pink fillet wrapped in bacon
⁃ 1 pomegranate
⁃ 1/2 savoy cabbage
⁃ oil, salt, pepper, butter
⁃ sugar
⁃ raspberry/apple cider vinegar
⁃ 1 clove of garlic
⁃ 1 shallot
INSTRUCTIONS: Heat up a drizzle of oil in a pan and brown the fillet wrapped in bacon on all sides. Meanwhile, brown a clove of garlic, add the savoy cabbage and some salt, then brown it over a high heat for two minutes. Once the Eat Pink fillet wrapped in bacon has browned, remove it from the pan and keeping the pan over the heat, add a knob of butter or a drizzle of oil and the chopped shallot. Let it get some colour, then add the pomegranate juice and seeds and half a glass of raspberry vinegar. Reduce the sauce, filter it and serve it on the Eat Pink fillet wrapped in bacon together with the savoy cabbage.
