

SALT AND PEPPER RIBS
with tzatziki

Ingredients

- Salt and Pepper Ribs
- 400g Greek yogurt
- 1 Cucumber
- 1 clove of garlic
- 2 tablespoons extra virgin olive oil
- 1 tablespoon White wine vinegar
- Fine salt to taste.



Proceedings
Remove ribs from plastic wrap and while still frozen place in air fryer at 180°C x 20 minutes. Alternatively, bake them in a preheated oven at 215°C x 25 minutes.
For the tzatziki sauce, grate the cucumber with a large-mesh grater, without removing the peel. Transfer the grated cucumber to a colander and squeeze it with a spoon to remove the vegetable water. Peel the garlic cloves and remove the core with a knife, then chop them finely to make a sort of cream. In a bowl add the yogurt, salt pepper and oil and mix well. Combine the cucumber and finally add the garlic. Let your tzatziki sauce sit for 2 hours to stabilize the taste. Plate and enjoy by dipping the ribs in the sauce and accompanying the dish with baked chips.
