Ingredients

  • Bacon BBQ flavor
  • 4 slices of rustic bread (preferably ciabatta type or homemade bread)
  • 2 ripe nectarines
  • 2 tablespoons of sugar
  • 1 tablespoon balsamic vinegar
  • 1 pinch of salt
  • 200 g of cream cheese
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon of lemon juice
  • 1 glass of rum
  • Salt, evo oil and pepper to taste.
  • Basil to taste.
  • 1 lemon
  • 250 g cherry or date tomatoes

Proceedings

Peel and cut the peaches into thin slices. In a nonstick skillet, heat the sugar until lightly caramelized. Add the peaches and deglaze with the balsamic vinegar and rum. Add a pinch of salt and let cool.

In a bowl, mix the cream cheese with the chives and lemon juice. Adjust salt and pepper to taste and set aside.

Wash the cherry tomatoes and blanch them for 2 minutes, score them with a cross and place them on a baking sheet lined with baking paper and season with olive oil, salt, and pepper. Leave them in the oven at 220 degrees for 15 minutes until the cherry tomatoes are slightly caramelized and wilted. Remove them from the oven and let them cool.

Meanwhile, cook the bacon in a skillet over high heat for 10 minutes. Heat the bread until it is nice and crispy and golden brown.

Spread a generous amount of the chive cream on each crostone, add the bacon the sweet and sour peaches, the cherry tomatoes, and the basil the job is done.
