

Pulled pork sandwich, guacamole and marinated peppers

Ingredients

- Pulled pork already frayed
- 2 red peppers, cut into strips
- 1 tablespoon of soy sauce
- 1/2 tablespoon of rice vinegar
- 1/2 tablespoon sesame oil
- 1/2 clove of garlic, finely chopped
- 1/2 teaspoon fresh grated ginger
- 3 hamburger buns
- 2 ripe avocados
- 1 clove of garlic, finely chopped
- 1 lime
- 1/4 red onion, finely chopped
- 1 small, seedless, diced tomato
- Salt and ground black pepper to taste.



Proceedings
For the guacamole: In a bowl, mash the avocados with a fork until creamy. Add the minced garlic, lime juice, chopped red onion and diced tomato. Mix well and adjust salt and pepper to taste.
For the soy marinated peppers: In a bowl, mix together the soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and ground black pepper. Add the bell pepper strips to the marinade and mix well to make sure they are well coated. Cover the bowl and let the peppers marinate in the refrigerator for at least an hour, stirring occasionally. Now heat the pulled pork in the microwave for 5 minutes at 800w and cut the rolls in half and toast them lightly. Spread a generous portion of the guacamole on each half of the sandwich and top with the pulled pork pieces. Add the soy marinated peppers on top of the pulled pork, close the sandwiches and serve.
